Lunch Standard


Good afternoon!

On my way to class, I stopped at Starbucks to pick up a bottled water and green tea.























Class was good today, lots of debate. Gotta love that! My Wednesday class goes right through lunch, so I eat during class.























I had about a cup of plain non-fat yogurt, an apple, and maybe 1/2 a cup of granola (these are just estimated measurements). It hit the spot, that's for sure.

Do any of you have lunches that are pretty standard in your diet? This parfait type lunch is one for me.

Two Mugs


Morning everyone!

I feel so rested this morning. Gotta love great sleeps. After D and I were married and we moved into together, I had terrible sleeps. I think it was the whole sharing the bed thing, but now that I'm used to it, I have the most amazing sleeps. Feels so good!

Now to breakfast: PUMPKIN OATS

D and I went grocery shopping last night, and I went around the grocery store, frantically looking for pumpkin puree. When I found it, I almost made a scream of joy. I refrained; however, since that probably would have scared the people around me. Ha! Who knew pumpkin puree could bring such happiness to a girl.






This oatmeal is from one of the largest pots of oats I've ever made. Since D is on days, and I have my early morning class again tomorrow, I made extra.

The oats had 2 cups of oats, 3 cups of water, 1 cup (and a little extra) of milk, half a 28 ounce can of pumpkin puree, a mashed banana, a swirl of maple syrup, ground ginger, nutmeg, ground cloves, and a boatload of cinnamon!








So tasty! This mug of oats, definitely fixed my hankering for pumpkin.
















Who can live without coffee? If you're one of these fortunate people, I congratulate you. It must be a wonderful feeling to be fully awake without chugging one of these mugs full of joe.

I have some bad news... I have no photos of my food today... I know! Please don't hate me. My food was ugly and boring any ways, and I have something that I hope will make it up to you.

Carb Overload


Evening!

I'm so happy school is done for the day. We ate dinner pretty much right after I got home.
















Remember that lasagna I made a few weeks ago? Well I had leftover meat sauce so we bought some whole-wheat, cheese tortellini. Such a simple dinner for nights when you don't have time to make something.
















Do I eat too many carbs? Sometimes I feel like I do, but every time I try to cut down on them, I spend the entire day starving. I think this is just what my body needs...
We have young adults tonight at church. Then I have more homework to do. Hope everyone's night goes well!

Leftover Favorite


Good afternoon everyone!

Lunch today was one of my new favorite dishes - Jambalaya.
















D and I took my parents out for lunch after church yesterday, to celebrate their anniversary. We ate at Cactus Club. This is one of our new favorite restaurants. Ever been?

This jambalaya was so good! It had tons of veggies (green beans, corn, peas, tomatoes), chicken, sausage, shrimp, and get this, BROWN rice! The waitress actually asks if you'd prefer brown rice or white. Isn't that awesome?

Hello everyone!

If you haven't read Jenna's post from last night, over at Eat, Live, Run, I highly suggest you do so. She had dinner with two contestants from Top Chef; Eli, and Kevin. AMAZING, isn't it? Then tonight she gets to try out their cooking at Murphy-Goode. So surreal. Top Chef is one of my favorite shows, which is why I'm so jealous.

Any ways, on a less exciting topic: Breakfast.
















I had a bowl of oats (what else?), with a fuji apple, peanut butter, maple syrup, and cinnamon. Oh yes, and then a little sprinkling of granola. Very tasty.
















Today I have class at 2 p.m. - a good thing because I have an assignment for tomorrow I'm not even half way done yet! I'm working on it though.

A Special Couple


I know I talk about my parents a lot, but today I have a special reason to.























It's their 29 wedding anniversary. How special is that?
When I think that D and I were only married 2 months ago, I have a hard time imagining 29 years from now.
Congrats mom and dad! You are both a wonderful example for any couple!
