Lunch Time

Happy lunch time to all!

I was starved by the time lunch came around. D bought us some pitas from Pita Pit. It's so handy when you live in the city! All you have to do is walk down the street to get food when you don't feel like cooking - a new concept to this farm girl.

My pita consisted of a whole wheat pita, chicken breast, lettuce, mushrooms, green peppers, carrots, pickles, cucumbers and honey mustard dressing.
















So good! It took me about 2 minutes to engulf the entire thing.
















Well almost the entire thing.

And then this...
















Half of a homemade oatmeal cookie. I now feel satisfied and ready for a workout!

My afternoon class was cancelled; however, it's not totally a good thing. I still have to do all the work we were going to do in class with no guidance of an instructor. Ah well, I'll get it done!

It's a Beautiful Morning

Good morning everyone!

D came in to wake me up this morning (he was on his night shift). I came downstairs and we shared a little oatmeal together.























I had two leftover from different days. Since we didn't have enough of one kind to share together we mixed together the carrot cake oatmeal and the pumpkin pie oatmeal.

Here's what was in the carrot cake oatmeal:

1 cup oats
1 cup water
1 cup milk
1 shredded carrot
finely chopped pineapple
ground ginger
cinnamon

I cooked this all up and then toasted a handful of pecans and shredded, unsweetened coconut and sprinkled that on top. After trying it, it did need a little more sweetness (I think I added too much ginger - not pleasant), so I added a little maple syrup to counter balance the ginger.

I did enjoy the pumpkin pie oatmeal better. It had:

1 cup oats
2 cups water
half a banana
about half a cup of pumpkin (mmmmm so yummy)
a copious amount of cinnamon
ground ginger
ground cloves
ground nutmeg
peanut butter
and a little maple syrup and milk to finish it off

And the mixed result?
















Not too shabby! I really liked how the pumpkin one calmed the flavors of the carrot cake oatmeal. I enjoyed my breakfast alongside a steamy mug full of green tea.

Unfortunately I need to start on my homework for today's class. Shouldn't take me too long, it's just reading.

Back in the Game

Hey Folks,

I know my absence from the world of blogging has been incredibly long, which I'm sorry for. Life just got hectic with the wedding and starting my first year at University. Right now I feel like I can balance writing a blog with all my other responsibilities.

I have no pictures of what I've been eating or witty articles to bring about the latest food trends. This is just my simple attempt at a "I'm so sorry, please forgive me" note. Can tomorrow be our fresh start?

Oh! And I'd love to share one photo from our wedding. I haven't got all my photos yet. I was only sent a preview of what's to come, let me show it to you!

One of my Perfect Saturdays

Perfect is a strong word, your right... and I did get a little burnt by the sun today, but my day was as close to perfect as us humans can aspire to achieve.












































































We spent our morning at the farmers market. This is my favorite farmers market in our little city. There's a great variety of booths - things from furniture to jam and it's located in the art district. There are some really beautiful buildings in the markets radius.
































After we shopped around we decided it was time for lunch.

At this place:



















D had the Farmers Omelet



















And I had the Veggie Omelet



















Both come with hashbrowns and 7 grain toast (which we got dry). After I snapped the picture, I scraped off all the cheese. I'm not a huge fan of cheese to be honest. The pictures were taken by my iphone, so forgive the poor quality.

Those are the highlights... my favorite part you ask? Spending another beautiful day with my dear fiance is my answer.

Breakfast for Dinner

This will really prove how much I ADORE breakfast, I don't only eat it during the early hours of the day, but also the later ones.

In the skillet went a few left over baked fries from last night, 1/4 of an organic bell pepper, 1/4 onion and one egg.


























This meal is the fastest one I know how to prepare. A swirl of spicy ketchup and I'm set for a fantastic dinner for one.

The Noon Hour,

Hey folks, I'm back! Time to dwell on lunch, but only for a short while, works a callin!

It was a pita from Pita Pit. Probably the best pita I've had in a long time.













It contained chicken breast, green peppers, cucumber, lettuce, mushrooms and honey mustard sauce. So good...

Next up.... dessert. And dessert from my favorite place at that... You guessed it! Starbucks.



















I'm sipping a half sweet, light ice shaken black iced tea lemonade. This drink is my favorite hot weather accompaniment. I don't even regret ordering it when I'm sitting in my freezing cold, air-conditioned office, which is saying something!

Time for Breakfast Already?

My last few posts weren't so bad were they? So I'm going to follow this trend and blog another days worth of food!

Here is todays breakfast:

A tasty composition of plain yogurt, raspberries, blackberries, walnuts, almond slivers, shredded coconut, agave syrup, and a copious amount of cinnamon.













It was a symphony of beautiful flavors and textures. The tartness of the berries, the sweetness of the agave, the smoothness of the yogurt complimented by the crunch of the nuts.


























This certainly was the perfect agreement between texture and flavor.
