I hope your evening has been fantastic thus far. Ours has been laid back, but right after I finish writing this post it's time to hit the books.
Pretty much right after my last post I had this to hold me over till dinner.
I love this flavor. Mmmm Mmmm good.
Then I scanned YogaDownload.com for a while, and bought the deal of the day. I didn't even see they had those! I'm planning to try it tomorrow.
D came home from work, and I made dinner.
For him - chicken ravioli and tomato sauce
For her (me) - vegetarian chili taco salad
I made it using the vegetarian chili from a few days ago, mixed greens, 1/4 green bell pepper, and nutritional yeast. It was pretty good, but it wasn't nearly enough calories to keep me full all night.
Soooooo, D and I hit up Superstore for a little frozen yogurt.
We usually just get the chocolate flavor, but today we decided on Cappuccino. AND we're SO glad we did!
It's yummy yummy. And yes, those are flakes of chocolate.
Alas, I must leave... I have a 3000 word paper to write.

Creamy Dreamy Oats
I'm enjoying one of the best bowl of oats I've had in a while. But before I talk about those, I'll go over what happened last night.
Let's start at the gym. I went to the gym really early in the afternoon, and banged out an hour on the stair climber. I almost fell over when I stepped off the machine. That workout took everything out of me.
My post workout fuel should have been a smoothie, since liquids absorb into the body so much fast than solid foods, but I didn't want to make one, so I went for a protein bar.
I did some homework, and then took off to go to my night class. Rhetoric is actually my favorite class I'm taking, so I don't mind going into school at night.
I packed these two dishes for dinner.
In the cottage cheese container:

- 1 serving raw "rice"
Twas a lovely portable dinner.
When I came home from class (an hour early! I love it when teachers let you out early), I made a snack.
Chia pudding! Before I stuck the bowl in the fridge for about 40 minutes I added:
- 2 tbsp chia seeds
- 2/3 cup almond milk
- cinnamon
It hit the spot.
Finally, onto this morning's meal.
In the pot:
- 1/3 cup oats
- 2 tbsp oat bran
- 1 cup water
- 1/2 banana
- 2 egg whites (whisked in after the heat is turned off)
Toppings:
- 1 tbps natural PB
- sprinkling of chia seeds
This bowl of oats is pretty much the simplest I'll make, but it was so creamy. I loved it!
D just got home, and we have plans to make for dinner tonight. We're going out for Indian food! Yay! I love Indian food.

Can't Wait for Next Weekend
I'm ready for the next weekend to begin. I feel like I haven't got a break yet! Sheeeesh... I need a break.
Here were the snacks I promised I'd eat earlier.
1/4 cup 1% cottage cheese, 2 tbsp granola
My mom bought me this tea about a month ago. I didn't even know there was such a thing as chocolate tea! It's amazing. It smells like your actually breathing in a chocolate that's sitting right in front of you.
So yummy.
A few hours later came this bar.
Next up - dinner!
I made zucchini "fries", butternut squash casserole and another couldn't-be-simpler mixed green salad.
For the butternut squash casserole:

I made zucchini "fries", butternut squash casserole and another couldn't-be-simpler mixed green salad.
For the butternut squash casserole:
- I split in half the squash, scraped out all the seeds and baked it for about 40 minutes at 350 degrees.
- When I took it out of the oven, I let it cool and smashed it all up.
- I satued an onion and garlic with sage in a pan over medium heat.
- Once the onions started to turn yellow I add them to the squash.
- I stirred everything together, sprinkled some (I'm talkin like 1 tbsp) parm cheese over the top and baked it for about 40 minutes.
For the "fries":
- I took two zucchinis and sliced them into stick shapes.
- Dried them off with a paper towel.
- Dipped them in a egg, then into a mixture of about 1/2 cup panko bread crumbs and 1/3 cup parm cheese.
- I layed them skin-side down on a baking sheet and baked them for about 20 minutes at 425 degrees.
I loved the "fries" the best. We dipped them in marinara sauce I had made earlier in the day. It was an awesome dinner in my opinion.
Then I hit the gym. I had planned on running 6 miles, but when I got to the gym I wasn't really feeling a slow run. I needed to do something intense. So I sprinted for about a mile, then did a shoulder workout. It was just what I needed.
Now I'm snacking on this power-packed bowl of protein.
- 1/2 scoop vanilla whey protein powder
- 2 tbsp chia seeds
- splash of water
- 1/2 cup plain nonfat yogurt
- 1/2 packet stevia
- 1 tsp cinnamon
I love the texture chia seeds get when you leave them soak for a few minutes.

A Brand New Look

Happy SATURDAY! To all you running your half-marathons today, GOOD LUCK! I wish you all the best. :)
I have a long run to do today, myself. Not nearly as long as a half, but a 6 miler. That's the longest run I've done since my hips were injured. Wish me luck!
Sorry there weren't very many posts yesterday. I had a crazy busy day. It started off with my breaky post, then I headed over to my friend's salon to get my hair cut and colored (I LOVE being a blonde again).
After that it was straight home to change for my first Bikram class. It was amazing!! I felt great during the class, but after the class, I got a chill from going outside in my sweaty, yucking clothes - not smart. I'm not sure what I was thinking with that one. Bikram is wonderful, the poses are challenging, but can all be simplified. I loved it. The teacher asked if any one was a new when we got in, I raised my hand, and she helped my through the entire class. It was awesome. My friend and I bought a unlimited weekly pass, so I'm gonna make sure I get there a few more times this week! Can't say enough good things about it.
When I came home from class, I had to immediately shower and change because D and I were going out for dinner with his Nana and cousin. We went out to a restaurant in Edmonton, called Moxies. It is a chain restaurant. They are located all over Canada (not sure if they're in the States). I had the salmon sandwich with nan bread, no sauce and a side salad with no feta and dressing on the side. I was happy to see that D's family is as high maintenance as I am, while ordering their meals! They all made similar changes to their meals.
Here are some of the eats I pictured for you yesterday.
This was a mixed green salad with half a cucumber. The white stuff on top is a mix of one egg white and one whole egg. I cooked this mixture in the microwave and chopped it up. The dressing was Frank's hot sauce and balsamic vinaigrette. YUMO (if I can borrow Rachael Ray's saying ;))!
I knew I would be needed some carbs to hold me over through yoga and unto dinner, so I had a small bowl of Kashi cereal and vector with almond milk. So tasty.
I had one of these bars, while I was at the hair dressers. The peanut butter flavor, which happens to be the best flavor.
This morning I knew I needed a slurp and gulp! So yummy. I love the chocolate flavored breakfast cookies.

New Template Unveiling!
Afternoon everyone,
When I woke up this morning I knew two things. I had a breakfast cookie ready to be eaten in the fridge and I needed to make a pot of coffee.
Here's the cookie:
I love the chocolate flavor so much, but I think I'll start experimenting from here on in. Today's cookie subsided my chocolate cravings. I think a cinnamon raisin cookie sounds pretty spectacular.
Here's the coffee:
Coffee in my Coldplay mug. D bought it for me when we went to see them last year. It's just about the perfect size for my morning cup of joe.
I don't have photos to show you of my lunch, but it's ok, cause it was pretty much the same as my supper last night.
After class, I made D's dinner - Chili. It's in the slow cooker getting all nice and.... cooked? Then I snacked on this:
Another one of my protein bars; the last protein bar unfortunately. This one was the cinnamon bun flavor. MmmmMmmm good.

I See Green
Today has been great. I feel like I've accomplished a lot, and I love that feeling.
About an hour after I ate breakfast I went to the gym for a killer shoulder work out. I love the Fitnessista's blog for many many reasons. One of them is her crazy work outs. Today I did the intermediate version of the Winter Shape Up week 2. It was awesome. My arms were quivering by the time I was finished.
Another reason why I love the Fitnessista? Her egg puff idea! Love this one - a great way to get protein in without taking in too many calories.
Soon after I got back to our house, I left again for school. Part way through class I munched on my lunch, which unfortunately went unpictured because my camera died. It was a cup of 1% cottage cheese, an organic apple, and cinnamon. Not too exciting, so don't feel bad for missing it.
When I got home again, I started making D's dinner. I made him beef lasagna, very similar to this one. While cooking his dinner I ate this:
I absolutely love these bars. They come in three different flavors. We got them from Cosco. They have 15 grams of protein! How awesome is that!?
About a half hour after D's lasagna went in the oven, I started on my dinner.
This had:
2 ounces pasta
1/2 tbsp butter
1/2 tbsp flour
1/2 cup milk
1/2 cup frozen peas
1.5 cup spinach
freshly grated nutmeg
s & p
It was alright. The sauce was hardly there at all, but the peas made up for it. I adore peas in my pasta.
After I finished that off (which didn't take long), I moved unto my salad.
This salad had about 2 cups of mixed salad greens, 1/4 of a tomato, 1/4 of a cucumber and less than a tablespoon of balsamic vinaigrette. So good. I think a salad is the best way to end a meal.
Now, it's back to work.
My work area looks something like this right now (yes, that is a cup of coffee, I need to stay awake through this paper!)....
